Chunky Monkey Nice-Cream Slice by Livia's Kitchen

Livia's Kitchen have gotten us all excited and ready to spring into summer - via the kitchen - with this caramel-y, peanut butter-y, biscuit-y nice-cream slab!
Summer’s finally here and we want to spend our days eating ice-cream! This one’s got a chewy peanut layer, a smooth peanut butter nice-cream and is topped with chopped up Nugglets. This recipe is the perfect way to use up those bananas that have been in the fruit bowl a little bit too long. Simply chop them up and put them in the freezer ready to become a delicious peanut nice-cream.
 
Bottom layer
100g pitted Medjool dates (10 dates)
30ml maple syrup (2 tbsp)
60g oat flour (1/2 cup)
40g roasted peanuts (1/4 cup)
A pinch of salt

Peanut butter nice-cream
250g peeled and frozen bananas (in pieces)
280g peanut butter (1 cup)

Topping
4 packets of your favourite Nugglets
 
1. To make the bottom layer: mix the dates and maple syrup into a paste using a food processor.

2. Add the oat flour, salt and peanuts and mix until the peanuts have broken down into small pieces and the mixture has formed a dough.

3. Place the dough in a lined tin (20cm x 10cm) and press it down until a smooth layer covers the base of the tin. Then, put the tin in the freezer while you make the nice-cream.

4. For the nice-cream: take out the banana from the freezer and leave it to defrost for 5 minutes.

5. Put the banana in the blender together with the peanut butter and blend until you have a smooth nice-cream (scrape down the sides if necessary while making it).

6. Get the tin from the freezer and pour your nice-cream on top.

7. Chop up the Nugglets and sprinkle them on top of the nice-cream until it’s completely covered. Leave to set in the freezer for 2 hours.

8. Take the ice-cream out of the freezer 5 minutes before serving and cut it up into slices and enjoy! Store in an airtight container for 3-5 days in the freezer.

Vegan Pea Salad

This is a favourite salad served both in the States and in Great Britain. We’ve made a simple vegan version of this salad to enjoy at home, at barbecues or pot luck suppers.

Vegan Pea Salad

Ingredients:

  • 4 cups green peas, fresh or frozen
  • 1 cup smoked tofu pieces
  • 1 red onion
  • 6 ounces vegan cheese, cubed
  • 3 tablespoons parsley
  • ½-¾ cup non-dairy yogurt
  • 1 tablespoon vinegar
  • 1 teaspoon vegetable bouillon powder
  • salt and pepper to taste

Directions:

  1. Thaw frozen peas or blanch fresh peas and allow to cool in a bowl.
  2. Cut the smoked tofu into pieces.
  3. Slice the red onion in half then slice the halves into 1/2 moon shapes, later separate the individual layers.
  4. Cut the vegan cheese.
  5. Mince the parsley.
  6. Mix the non-dairy yogurt with the vinegar and vegetable bouillon powder.
  7. Add most of the parsley saving a bit as optional garnish.
  8. Season to taste with additional salt and pepper.
  9. Add the tofu and cheese to the peas.
  10. Add most of the dressing and mix well.
  11. Place in the refrigerator to season for at least 1/2 an hour.
  12. Shortly before serving, allow the salad to come to room temperature.
  13. Refresh with the rest of the dressing.
  14. Mix again.
  15. Garnish with a few tofu pieces or parsley.

Adaptogens in Focus: Ashwagandha

As part of Adapto-June we are going to focus on several adaptogens that are of particular interest for those of us who live in hectic cities such as London. This week: Ashwagandha Unwrapped, with a little help from our friends at Wunder Workshop!
As part of Adapto-June we are going to focus on several adaptogens that are of particular interest for those of us who live in hectic cities such as London. Adaptogens are organic plants, roots and mushrooms that quite literally help the body to adapt to physical, environmental and emotional stress - all of which, most of us can certainly identify with. This is not some faddy new concept either, but rather, as is usually the case with health, an old concept based on traditional medicines with Ayurveda, Chinese Medicine, South American and Russian roots. Whereas the Western world’s approach to medicine is centred on curing disease, the ancient medicine from the aforementioned cultures focuses far more on identifying your personal constituency and using herbs and food to increase longevity, boost health and enhance your mood, to prevent diseases and support overall wellbeing.
 
Ashwagandha root (also known as Indian Ginseng) is one of these ancient roots that is categorised as an adaptogen. It is popularly known as the ‘king of Ayurvedic herbs’ and is classified as a rasayana (life extender). In Ayurvedic medicine it is commonly prescribed to lower stress, anxiety, for its anti-inflammatory and anti-arthritic compounds, which was found useful in clinical cases of Rheumatoid and Osteoarthritis, especially in combination with turmeric. One of the most relevant studies is on its ability to reduce adrenal fatigue and stabilise thyroid hormones by lowering cortisol levels (the hormone released in stressful situations). When our cortisol is increased on a chronic basis, aka we are constantly stressed, it can lead to a variety of other issues such as depression, high blood sugar, suppressed immunity, low libido, hypertension and weight gain just to name a few. Introducing some of these adaptogens into your daily routine, can be a small investment towards supporting your overall wellbeing in the long run.  
 
When it comes to taking Ayurvedic herbs, and in this case Ashwagandha, make sure you take it in a polyherbal combination with synergizing herbs and spices, and prepare it with a healthy fat (such as coconut milk) which will help to increase its bioavailability. Welcome to Adapto-June!

All month long we'll be show-casing the incredible power of adaptogens across all our departments; from Health & Body Care, to our Salad and Hot Dish Bar and brand new Wellness Bar!
This June we’re putting adaptogens on the pedestal they deserve and celebrating them across our stores.

Why? Well adaptogens are a pretty amazing group of foods & herbs. To be classed as an adaptogen, herbs must be; non-toxic to the body’s physiological functions, offer widespread support and help bring the body back to equilibrium. They have been used in Ayurvedic and Chinese medicine for centuries, but we are just rediscovering how amazing they can be. 

Adaptogens essentially set about creating balance in your body by supporting your hormonal system. One of the most amazing things about them is that whilst they all have their own broad functions, they work with your body and adapt their function to your body’s specific needs.   
Some support your energy levels, such as maca. Others can reduce your stress levels, such as ashwagandha or as with ho shou wu, even boost your sex drive.

Adaptogens come in many different forms; pills, tinctures or powders. You can mix them into a smoothie, your morning coffee or mix them into your food.
 
On our food and drink counter this month we have made it even easier for you to get to know adaptogens by creating some special dishes. Making it as easy as ABC & D for you to include them in your diet…..

Ashwaganda Toasted Seeds….we’ve toasted linseeds & pumpkin seeds with tamari and ashwagandha for a stress busting addition to your meal. Through regulating cortisol (your body’s stress hormone) ashwagandha can help to lower stress levels.

Buzzing Beet Houmous….our adaptogenic take on our food counter staple. We’ve combined our houmous with beetroot and an energy boosting blend of ingredients; baobab, maca, guarana & ginseng. Both ginseng and maca can help to reduce fatigue, without any caffeine come down.

Cashew & Supergreens Pesto Portobellos…we’ve given our plant box favourite a make over for the month. Into the cashew & kale pesto we’ve added; maca, kelp, cacao, hemp, spirulina, chlorella, lucuma and barleygrass. Black Bean Chocolate Protein Balls by Biona

Chocolatey, protein-packed and containing a not-so-secret fibre rich ingredient!
INGREDIENTS
 
3-4 pitted dates
400g can Biona Organic black beans, drained and rinsed
40g chocolate protein powder
65g Biona Organic Almond or Peanut Butter
2 tablespoons Biona Organic unsweetened applesauce
1 tablespoon cocoa powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 tablespoon Biona Organic Coconut Milk
 
Optional Toppings:
Seasame Seeds
Matcha Powder
Beetroot Powder
Turmeric
Freeze Dried Raspberries
 
METHOD
 
  1. In a small bowl, add dates. Cover with boiling water; set aside for 10 minutes.
  2.  
  3. In the bowl of a food processor, add dates, black beans, protein powder, almond butter, applesauce, cocoa powder, vanilla, salt and coconut milk.
  4.  
  5. Pulse to combine until all ingredients are mixed together and smooth; stop to scrap the sides if needed. It should be like a soft dough texture.
  6.  
  7. Roll the dough into 15-20 balls.
  8.  
  9. Place each ball onto paper or a plate.
  10.  
  11. Roll each protein ball in the topping of your choice and pop in the fridge to firm up.
  12.  
  13. Store in an airtight container in the fridge for up to 1 week.

Interview with Mia Hague of Eco-Friendly Greetings Card Business Paper Heron

Check out our exclusive interview with Mia Hague of Paper Heron, a greetings card business with a difference. This is the first in a series of chats with some of our favourite suppliers to Planet Organic Living!
Paper Heron is a greetings card company with a difference; all their cards are made from 100% recycled paper and their gorgeous and original designs are sketched in vegetable ink. You can find them on Planet Organic Living now.

We chatted to founder Mia Hague earlier this month to find out a little more about her eco-friendly company, who and what inspires her, and how she achieves balance in her day-to-day life.

P.O.: What made you start the Paper Heron?


M.H.: Paper Heron was an idea sparked from an existing card range I create, with a very different style.

P.O.: What or who inspired you to become more ethical and sustainable?

M.H.: From the start of my company Mia Hague Illustration back in 2014 we’ve been ethical. It’s just something that had to be done. I couldn’t bring myself to print my designs on paper stock that wasn’t looking after the forests or packing cards into clear plastic bags instead of compostable ones. Sadly, it would be a lot cheaper to be unethical!

P.O.:Is the environment and nature something you have always been aware of?

M.H.: Yes ever since colouring in a book age 8. It was about the environment, renewable energy and how we can protect wildlife, trees and ultimately the planet. I’ve never forgotten it!

P.O.: If you weren't running this company what would you be doing?

M.H.: Running my own little cafe.

P.O.: Who is the one person you couldn't have started your business without?

M.H.: A little encouragement from a few friends and shop owners telling me my designs would sell, gave me the push to keep going.

P.O.: What advice would you give someone looking to start their own company?

M.H.: Do it NOW. Don’t wait. Make yourself a space you can work from that’s private and just yours. Work on it quietly along side what you already do.

P.O.: What do you see for the future of your company?

M.H.: I think I’ll always enjoy designing greetings cards, but I also see myself creating picture books, with real words teaching children how to be good people. Also perhaps a colouring book about the environment!?

P.O.: What's your favourite product from your brand?

M.H.: I really like the ‘Old’ tortoise card. I do a lot of commissions in this style too which I love doing.

P.O.: Other than your own company, which is your favourite sustainable company?

M.H.: Hazel Bee - Ethical cards and gifts, Green Planet Goods (I love their metal straws!) and the company that prints my cards along with lots of other items, ALocalPrinter.

P.O.: How do you find balance in your life?

M.H.: I don’t give myself too many things to do in a day, If I can help it! Try and have an equal amount of being outside and inside. 8 hours sleep.

P.O.: What are three things that you can't live without?

M.H.: My partner, my dog, and tea.

P.O.: In 3 words, how do you live your life?

M.H.: Kindly, colourfully and peacefully.

Biolive Kombucha Slaw (Gut friendly + Glowing Skin + Immune Boosting)
Combining red cabbage, butternut squash and pickled ginger this dish may appear on the surface like a normal slaw. But the punch is in the dressing. We’ve created our own Kombucha vegan mayonnaise to give this dish its gut friendly benefits.
 
Summer Glow Salad (Glowing Skin + Gut Friendly + Heart Health)
A relatively simple but delicious salad combing tomatoes, fennel and courgettes. A light and summery salad with a vitamin C punch helping you achieve that Summer glow. We’ve even snuck some moringa into the dressing!
 
Spicy Seitan Sausage Stew (Protein packed + Energy + Heart healthy)
Stews aren’t necessarily the first thing that springs to mind when you think Summer food, but hey we know we can’t always rely on it being warm. This stew combines seitan merguez sausages and butter beans for a protein packed option which will stop you reaching for the biscuit tin in the afternoon.
 
Chimichurri Cauli (Detox + Immune Boost + Gut Friendly)
Cauliflower is one of our absolute favourite ingredients at the moment and we loved experimenting with some great recipes for this menu. This roasted cauli with chimichurri spices was the easy winner and we know you’ll love it.
 
Plant Box: Aubergine & Quinoa Veatballs (Gut Friendly + Energy + Protein Packed)
New to the Plant Box section of our menu, these vegan meatballs aka veatballs combine aubergine and quinoa coated in tomato sauce. They are a great source of fibre for a healthy gut and pack a protein punch.
