Review: Black-eyed peas and kale soup

McKel at the Nutrition Stripped blog has a delicious way of celebrating the New Year with a great black-eyed pea and kale soup.

We followed the recipe which was quick and easy, and enjoyed every delicious mouthful. We enjoyed the recipe as a main meal at lunchtime. It made 4 generous servings. It would also be a great meal for a large group or party where you could cook everything in a slow cooker, and let people help themselves throughout the party. Black-eyed peas are not just for New Years, they are delicious and healthy to serve any time during the year.
